Herault is a French department of Occitanie region that is positioned southwest of France and its name comes from the Herault River.

Herault is stated to be one of the 83 departments that were formed during the French Revolution on March 4, 1790. It was part of the former province of Languedoc.

Some famous local ingredients are fish from the Mediterranean. All types of fish can be found here like thon which is tuna sardines, anchovies, baudroie is another name for lotte or monkfish, rouget or red mullet, seiche or cuttlefish, calamar or squid, supions also named baby squid or cuttlefish, encornets which is a local name for squid, poulpe or octopus, dourade or bream, loup or sea bass.
Shellfish is not encountered very often in the large Basin de Thau behind Sete. There are a lot of oysters and mussels beds as well. The young shells are imported from the Atlantic coast in order to grow up in the basin. It is because they will be fresher if grown up in this area.
Besides wine in this region is also good for breeding sheep and goats that produce cheese. The most famous cheese is the blue Roquefort. It is matured in the caves of the Midi-Pyreneees and most of its part comes from the ewes that live on the high grant plateau of which the largest one in Larzac.
